Leftover Roast Chicken Soup

4 cups (1 litre) chicken stock

1 cup shredded chicken, from leftover whole roast chicken

1 carrot, sliced into 1cm slices

1 stalk celery, sliced into 1cm slices

1 small onion, sliced into quarters

2 cloves garlic

200g corn kernels

100g pasta shells or other pasta shape

Handful of fresh parsley leaves, chopped

Salt and pepper, to taste

2 spring onions, thinly sliced, to garnish

Drizzle of olive oil, to garnish
