Chocolate Mousse Cupcakes {Rich and Silky!}
Ingredients

  • 6 tablespoons unsalted butter cut into pieces (¾ stick)
  • ¼ teaspoon espresso powder or instant coffee powder, heaping
  • 3 large eggs whites and yolks separated
  • 6 tablespoons sugar divided
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Sliced fresh strawberries optional for serving
  • subheading: For the Whipped Strawberry Cream Cheese Frosting:
  • 4 ounces reduced-fat cream cheese softened (do not use fat free)
  • 5 ½ tablespoons powdered sugar divided
  • ½ cup finely chopped fresh strawberries
  • 2 drops red food coloring optional
  • ¾ cup  heavy cream
  • 1 tablespoon fresh lemon juice
