Nancy’s meatloaf
This is THE BEST meatloaf!
Ingredients
  • subheading: Sauce:
  • 1⅔ Cup ketchup
  • 3 Tbsp Brown sugar
  • ¼ Cup Dijon mustard
  •  
  • subheading: Meatloaf mix:
  • 2 lbs ground beef
  • 1 tsp minced garlic
  • ⅓ Cup oatmeal
  • 1½ Tsp salt
  • 3 slices bacon
  • ½ Cup diced onion
  • ½ Cup chopped parsley
  • 2 eggs
  • ½ tsp pepper
  • ½ CUP SAUCE
Steps
  1. Make sauce
  2. Combine meatloaf mix in bowl
  3. Make into a loaf and place in roasting dish
  4. Top with ⅓ cup of sauce
  5. Place bacon across top
  6. Cover with foil and bake for 1 hour at 400 degrees
  7. Remove foil and bake another 10 to 15 minutes till bacon is crisp
  8. Internal temperature should be 160 degrees
  9. Let meatloaf cool 15 minutes
  10. Heat remaining sauce and serve

  • My bacon does not always crisp up
