This is THE BEST meatloaf!
Ingredients
- subheading: Sauce:
- 1⅔ Cup ketchup
- 3 Tbsp Brown sugar
- ¼ Cup Dijon mustard
- subheading: Meatloaf mix:
- 2 lbs ground beef
- 1 tsp minced garlic
- ⅓ Cup oatmeal
- 1½ Tsp salt
- 3 slices bacon
- ½ Cup diced onion
- ½ Cup chopped parsley
- 2 eggs
- ½ tsp pepper
- ½ CUP SAUCE
Steps
- Make sauce
- Combine meatloaf mix in bowl
- Make into a loaf and place in roasting dish
- Top with ⅓ cup of sauce
- Place bacon across top
- Cover with foil and bake for 1 hour at 400 degrees
- Remove foil and bake another 10 to 15 minutes till bacon is crisp
- Internal temperature should be 160 degrees
- Let meatloaf cool 15 minutes
- Heat remaining sauce and serve
