Chicken Curry
Spicy & Hot
Ingredients
  • 1 kg chicken (thighs & drumsticks)
  • 1 tblsp garlic paste
  • 1 tblsp ginger paste
  • ½ tumeric powder
  • 1 tblsp chilli powder
  • 1 tsp salt
  • 1 inch cinnamon stick
  • 1 tblsp sesame seeds
  • 5 cloves
  • 10 peppercorns
  • 1 tblsp cumin seeds
  • 1 tblsp coriander seeds
  • 6 dried chilli peppers
  • 1 cup fresh grated coconut
  • 4 to 5 tblsp vegetable oil
  • 1 onion
  • 2 bay leaves
  • 5 green chillies (to taste)
Steps
  1. Make MARINADE =garlic paste + ginger paste + tumeric powder + chilli powder + salt
  2. Rub well into chicken, cover & set aside for 30 minutes
  3. Make GARA MASALA = cinnamon stick + sesame seeds + cloves + peppercorns + cumin seeds + coriander seeds + dried chilli peppers
  4. Toast Gara Masala until fragrances released & cool
  5. Grind Gara Masala + coconut with splash of water to make paste
  6. Heat oil in large pan & add finely diced onion & mix well until translucent & soft
  7. Add bay leaves + green chillies & cook for 1 minute
  8. Add Gara Masala/coconut paste & cook until oil separates from oil
  9. Add marinated chicken on high heat for 5 minutes to sear chicken skin sealing in juices
  10. Add 1 to 1.5 litres water & mix well & reduce heat to medium & cook for 10 minute, stirring occassionally
  11. Serve with rice & naan
