Spicy & Hot
Ingredients
- 1 kg chicken (thighs & drumsticks)
- 1 tblsp garlic paste
- 1 tblsp ginger paste
- ½ tumeric powder
- 1 tblsp chilli powder
- 1 tsp salt
- 1 inch cinnamon stick
- 1 tblsp sesame seeds
- 5 cloves
- 10 peppercorns
- 1 tblsp cumin seeds
- 1 tblsp coriander seeds
- 6 dried chilli peppers
- 1 cup fresh grated coconut
- 4 to 5 tblsp vegetable oil
- 1 onion
- 2 bay leaves
- 5 green chillies (to taste)
Steps
- Make MARINADE =garlic paste + ginger paste + tumeric powder + chilli powder + salt
- Rub well into chicken, cover & set aside for 30 minutes
- Make GARA MASALA = cinnamon stick + sesame seeds + cloves + peppercorns + cumin seeds + coriander seeds + dried chilli peppers
- Toast Gara Masala until fragrances released & cool
- Grind Gara Masala + coconut with splash of water to make paste
- Heat oil in large pan & add finely diced onion & mix well until translucent & soft
- Add bay leaves + green chillies & cook for 1 minute
- Add Gara Masala/coconut paste & cook until oil separates from oil
- Add marinated chicken on high heat for 5 minutes to sear chicken skin sealing in juices
- Add 1 to 1.5 litres water & mix well & reduce heat to medium & cook for 10 minute, stirring occassionally
- Serve with rice & naan
