Potato salad for packed lunches - High Carb Hannah (you tube)

Ingredients
  • 1 large avocado
  • 3 steamed russet potatoes chopped
  • ¼ red onion minced
  • 2 stalks celery diced
  • 2 tbsp mustard
  • 1 tsp dried dill
  • 1 tsp apple cider vinegar
  • 1 tsp maple syrup
  • ¼c water
  • ¼ tsp paprika
Steps
  1. Mash together your avocado, maple syrup, water, apple cider vinegar and dill until smooth.
  2. Add in your onion and celery and mix.
  3. Then add in your steamed potatoes.
  4. Add salt and black pepper to taste and paprika if you wish.
