Anytime Cheese Sauce
Ingredients
  • 1 medium Yukon gold potato, cut into 1” cubes
  • 1 medium sweet potato, cut into 1” cubes
  • ¼ cup rolled oats
  • ¼ cup nutritional yeast
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
Steps
  1. 1. Bring a large stockpot of water to a boil over high heat. Gently and carefully immerse the Yukon Gold potato and sweet potato in the boiling water. Cook for 12 minutes. Strain, reserving 3 cups of cooking liquid.
  2. 2. In a blender, combine the reserved cooking liquid with the boiled potato and sweet potato, oats, nutritional yeast, lemon juice, garlic powder, onion powder, and paprika. Blend on high for 3 to 5 minutes, and serve.
