Kim’s Keto Sandwich Thins

Ingredients
  • 2 egg whites, beaten into soft peaks
  • ½ cup THM baking blend*
  • 1 tsp chia seeds
  • 1 T golden flaxseed meal
  • ¼ tsp salt
  • 1 ½ tsp baking powder
  • 2 T mild olive oil or melted coconut oil
  • 2 T water
  • Trader Joe’s Everything But the Bagel seasoning
Steps
  1. Add everything through water in a medium bowl. Stir and fold lightly with a fork just until blended.
  2. Divide into 4ths and spoon into a muffin top baking pan. Or, line a cookie sheet with parchment and spread into rounds about ¾ inch thick with the back of a spoon.
  3. Bake at 325 for 10 minutes on convection setting. May take a few more minutes in a conventional oven.
  4. Makes 4 thins or 3 larger buns that can be split and toasted.
