Liquid Mozz
This works great in lasagna or any casserole where you want to replace mozzarella.
Pour the liquid in where you would put the cheese layer, bake, and allow to cool before reheating.
Also works on pizza. Make sure you make a nice ridge on the crust before pouring or it all runs off.


Ingredients
  • 1 cup aquafaba (cooking liquid from any beans)
  • ½ cup white beans OR ¼ cup raw cashews (I've tried it with both and they work equally well)
  • 3 tbs tapioca starch
  • 1 tsp nutritional yeast
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ tsp mustard powder
Steps
  1. All in the blender until very smooth
  2. Store in a lidded container up to a week in the fridge
