Instant Pot Stuffed Grape Leaves
Ingredients
  • subheading: Instant Pot Stuffed Grape leaves:
  • 1 small Cornish hen (optional) Cut in half at the breast.
  • 1 Jar of grape leaves (I used grape leaves my mother in law hand-picked from her grape vine in Palestine last summer. Stored in an air tight jar.)
  • Bring a small pot of water to boil. Place half of the grape leaves in the water. Leave to boil for 7 to 10 minutes. Repeat with the other half. This will help tenderize the leaves better for cooking. -
  • note: Stuffing**
  • 3 cups Basmati rice (rinsed)
  • ½  onion ( chopped up into small cubes. About ¾ inch)
  • 2 small tomatoes ( chopped up same size as onion)
  • 2 tablespoons dried parsley
  • 3 tablespoons olive oil
  • Salt and Pepper ( your own preference)
  • note: Broth**
  • 3 tablespoons of tomato paste or 6oz can of tomato sauce.
  • 5 to 6 cups of boiled water. Or enough just to cover the grape leaves in the pot.

  • After rolling up the grape leaves set aside and get the Cornish hen.
  • Place hen on bottom of the pot in the Instant Pot. Sprinkle some salt, pepper, and some citric acid over it.
  • note: Place stuffed grape leaves over the hen.. Try to place them evenly, forming a nice layer. If you like them with a lemon flavor, sprinkle about half a tablespoon of citric acid over the leaves Add broth until leaves are slightly covered with it. Cover Instant Pot and set on Manual for 20 to 25 minutes. Enjoy!
