Partridge in a Mushroom, Tarragon and Cream Sauce

Ingredients
  • 1 large onion finely chopped
  • 6 mushrooms finely chopped
  • approx 2 tablespoons chicken stock
  • 2 partridges
  • Salt and pepper
  • 1 teaspoon tarragon
  • Butter and olive oil for sautéing
  • A few teaspoons more chicken stock
  • 2 to 3 teaspoons cornflour to thicken stock
  • 2 tablespoons double cream.
  • 2 or3 teaspoons Dijon mustard - optional.
