- approx 2 tablespoons chicken stock
- 2 partridges
- Salt and pepper
- 1 teaspoon tarragon
- Butter and olive oil for sautéing
- A few teaspoons more chicken stock
- 2 to 3 teaspoons cornflour to thicken stock
- 2 tablespoons double cream.
- 2 or3 teaspoons Dijon mustard - optional.
