Tuna, Tomato, and White-Bean Salad
Ingredients
  • 2 Yukon Gold potatoes (12 ounces), peeled and sliced ½-inch thick
  • Kosher salt and freshly ground pepper
  • 8 ounces green beans, trimmed

  • 1 tablespoon red wine vinegar
  • 1 pound tomatoes, such as Campari or beefsteak
  • ¼ cup extra-virgin olive oil, plus more for drizzling
  • 1 can (15.5 ounces) white beans, such as cannellini, drained and rinsed
  • 2 jars (each 5 ounces) high-quality tuna packed in oil, drained
  • Arugula, for serving
