Light Apple Cake Recipe

Transitioning from 80% raw food to Whole Food Plant Based diet (WFPB) ***Cooking without oil and adapting my recipes accordingly***

130 g oats

200 ml boiling hot water (soak for 5 minutes)

50 g melted butter (3.5 tbsp)

130 g natural yoghurt (or sour cream)

2 eggs

30 g sugar (2.5 tbsp)

5 g vanilla sugar (1 tsp)

1 apple (grated)

80 g raisins (or frozen berries like cherries or currants

7 g baking powder (1.5 tsp)

30 g walnuts (chopped)

Olive oil
