Castle Enchilada Hamburgers

  • 10 white castle hamburgers
  • 8 oz sour cream
  • 4 oz shredded cheddar cheese
  • 16 oz jar of salsa
  • 1 oz taco seasoning mix
  • 3 T parsley*
  • ½ small can sliced black olives
  1. Preheat oven to 325
  2. Combine sour cream, parsley and half of the cheese
  3. Prepare taco seasoning mix according to package directions
  4. Grease an 8 x 12 baking dish and arrange castle sliders side by side in 2 rows of 5
  5. Remove top buns. Spoon cheese and sour cream mixture on each hamburger and replace top buns
  6. Spoon prepared taco seasoning sauce over each hamburger. Spoon salsa over each hamburger.
  7. Cover with remaining shredded cheddar
  8. Dot with sliced black olives
  9. Bake at 325 for 25 to 30 minutes
  • *Use cilantro in place of parsley in sour cream sauce, add ½ tsp lime zest, pinch of salt and ½ tsp lime juice.
  • *add minced fresh jalapenos along side the black olives.
