Simmered Kabocha Squash かぼちゃの煮物
Ingredients
  • 1 lb kabocha (squash/pumpkin) (½ of small kabocha)
  • 1 knob ginger (optional; 1", 2.5 cm)
  • subheading: Katsuo Dashi:
  • 1 ¾ cups water
  • 2 packs katsuobushi (dried bonito flakes) (1 package contains 3 grams katsuobushi)
  • subheading: Seasonings:
  • 1 Tbsp sugar
  • 2 Tbsp sake
  • 2 tsp soy sauce
  • pinch kosher/sea salt (I use Diamond Crystal; use half for table salt)
