- 1 knob ginger (optional; 1", 2.5 cm)

- 1 ¾ cups water
- 2 packs katsuobushi (dried bonito flakes) (1 package contains 3 grams katsuobushi)
- subheading: Seasonings:
- 1 Tbsp sugar
- 2 Tbsp sake
- 2 tsp soy sauce
- pinch kosher/sea salt (I use Diamond Crystal; use half for table salt)
