  • 1 garlic clove, minced
  • 1cm ginger, grated
  • ½ tbsp tamari (or soy sauce)
  • ¾ tsp miso
  • ½ tsp chilli oil
  • subheading: for the broth:
  • 150ml unsweetened soy milk
  • 150ml vegetable stock
  • subheading: for the noodles/toppings:
  • 1 serving ramen noodles
  • 1 small/half a large head of pak choi, leaves separated
  • ½ a red chilli, sliced
  • ½ tbsp white wine/rice vinegar
  • ¼ tsp sugar
  • ½ tsp sesame seeds
  • chilli oil to finish
