Spinach Prosciutto and Mozzarella Stuffed Pork Tenderloin

  • 2 cups fresh baby spinach
  • 2 tbsp chopped sun dried tomatoes
  • 1 oz thin sliced prosciutto
  • salt and fresh cracked pepper, to taste
