Farro Vegetable Soup
Ingredients
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 ribs celery, sliced
  • 2 cloves garlic, minced
  • 4 potatoes, chopped (mine weighed 1.6 lbs)
  • 1 cup uncooked farro
  • 6 cups water
  • 2 tsp salt
  • 1 TBSP italian seasoning
  • 1 14-oz can tomato sauce (or 3 TBSP tomato paste)
  • 1 14-oz can white beans or kidney beans
  • 2 TBSP nutritional yeast
  • 2 TBSP red wine vinegar (or lemon juice)
  • 1 cup frozen peas
  • 2 cups chopped kale or spinach
  • chopped basil, hot sauce, or red pepper flakes for topping
