This can be made without the Beyond Sausage. I don't always have those and don't buy them very often.

Ingredients
  • 2 Beyond Meat Sausages (optional)*
  • 1 bell pepper, cut into large chunks
  • ½ large onion, cut into chunks
  • 1 large potato (or a couple of medium-sized)
  • 1 large tomato chopped
  •  
  • 2 tablespoons extra virgin olive oil - divided
  • 2 tablespoons balsamic vinegar - divided
  • ½ tablespoon lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garlic powder, salt
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp pepper
  • ½ salt (plus +/- to taste)
  • ¼ teaspoon red pepper flakes
  • salt to taste
Steps
  1. Microwave the potato with the peel on (or roast). Once done, remove the peel and cut into large chunks.
  2. Add a tablespoon of oil to a large frying pan over medium heat. Fry the beyond sausage in the oil until crispy.**
  3. Add the veggies to one side of the pan and the potatoes to the other. If there isn't enough room, consider cooking the potatoes first and then add in the veggies later. The potatoes won't get as crispy if they are cooked WITH the veggies, but do whatever works best for you.
  4. Add the spices and stir for a couple of minutes, then add the lemon and 1 tablespoon of the divided vinegar. Cook for 5 to 10 minutes until almost tender and then push to the side.
  5. Add the remaining divided oil to the empty side of the pan and heat. Then add the chunks of tomato and the remaining vinegar and cook until softened. Stir everything together for a couple of minutes and adjust the salt to taste.
  6. Cut up the beyond sausage and either add it to the pan and stir it in or just make room on the side of the veggies and reheat it. I like to lay mine across the bowl as I did in the picture. I find the resulting texture more pleasing.
  7. Add fresh basil and serve with rice or side of choice.
Notes
  • * The Beyond sausage is optional. This is delicious without it. Just use the same amount of olive oil and skip the sausage part of the recipe.
  • ** The reason I add oil to the pan to cook the beyond sausage is that it will infuse the oil with a delicious flavor. Actually, whenever I fry a Beyond sausage I cook it in oil and then freeze the oil for future use. This doesn't make the sausage greasier, as the Beyond will actually release it's own oil to add to the volume in the pan and does not absorb the oil you added. If I add a tablespoon of olive oil, I get more than a tablespoon back after it has finished cooking. Healthy? Heck no, but I like "treat meals" once a week and it works for me.
