  • 1 onion, diced
  • 1 garlic clove, peeled and minced

  • 1 courgette (zucchini), (approx. 150g or 5 ⅓ oz) chopped into small pieces
  • 1 red pepper (capsicum), chopped into small pieces
  • 1 tsp dried chilli flakes
  • 1 tsp ground cumin
  • 1 x 400g tin black beans, rinsed and drained (see Notes)
  • 1 x 400g tin chopped tomatoes
  • 100 g plain full-fat Greek yogurt
  • ½ tsp ground sweet paprika
  • Fresh parsley
