Wild Mushroom Asiago Chicken
Ingredients
  • 1 lb boneless, skinless chicken breast or thigh use thigh if you prefer a more flavorful meat
  • ¾ tsp Salt divided
  • ⅛ tsp Pepper
  • ½ cup flour divided
  • 4 Tbsp butter
  • 16 oz fresh mushrooms, wild full-flavored varieties cleaned and sliced; we like Chanterelle and Morel
  • 3 to 4 cloves fresh garlic divided
  • ½ cup dry white wine can substitue low sodium chicken broth or stock
  • ¾ cup low sodium chicken broth or stock
  • 3 tsp fresh thyme leaves removed from stem, minced
  • ½ cup half-and-half cream can use heavy cream, if you don't mind the extra calories!
  • ½ cup Asiago cheese shredded, tightly packed in measuring cup
  • ¼ cup fresh Parmesan cheese grated
