Fast and easy bean stew or soup

Ingredients
  • 1 pound bag of lima beans
  • 1 sweet onion, chopped
  • 2 jalapeños, sliced
  • 2 carrots, sliced
  • 4 stalks celery, sliced
  • 4 cloves garlic, chopped
  • 5 tsp. Vegetable bullion, no salt added
  • 1 Tsp crushed rosemary
  • 1 tsp lemongrass
  • Vegetarian sausage slices (optional)
Steps
  1. Rinse and soak beans overnight, or per instructions on bag.
  2. Using a heavy pressure cooker on medium heat, sauté onions, celery and carrots for five minutes, adding a small splash of water if they brown and stick. Toss in the jalapeño and garlic, and cook for a minute more.
  3. Add beans and about five cups of water to at least cover the beans and veggies by one-inch. add seasonings and stir.
  4. Turn heat up and clamp on lid.
  5. Once it’s up to pressure, set timer for 25 minutes and keep an eye on it in case temp needs adjusting to increase/decrease pressure. If using a modern pre-set model, follow your operating instructions.
  6. When timer is done, turn heat off and let it sit until pressure is completely released.
  7. If you want veggie sausage slices added, brown them a little and add them to each bowl.
  8. Salt to taste.
Notes
  • This recipe is made for a whole foods, plant-based diet. Substitutions may be made, such as unsalted meat broths, and real sausage may be added before cooking.
