Tangy Tuna and Veggie Sandwich

Ingredients
  • 6 ounces water-packed tuna, drained
  • ¼ cup diced cucumber
  • 2 tablespoons diced red bell pepper
  • 2 tablespoons diced dill pickle
  • 1 teaspoon prepared mustard
  • 1 teaspoon balsamic vinegar
  • 1 slice sprouted-grain bread, toasted
  • 1 cup sliced apple, pear, or any Phase 1 fruit
Steps
  1. Combine the tuna, cucumber, bell pepper, pickle, mustard, and vinegar in a bowl. Spread the tuna mixture onto the toasted bread. Serve with the fruit.
