One Pan Thai Shrimp and Vegetables
Ingredients
  • 2 cups carrots, spiralized or thinly sliced (if spiralized, 2 cups packed)
  • 2 cups red bell pepper, thinly sliced (2 peppers)
  • 2 cups fresh spinach (packed)
  • 1 lb raw shrimp, peeled and deveined
  • salt and pepper for seasoning
  • cilantro, chopped (as much as you like!)
  • subheading: Sauce:
  • 1 (14 oz) can of full-fat coconut milk
  • 1 Tbs raw sugar
  • 4 tsp creamy peanut butter
  • 1 Tbs low-sodium soy sauce
  • 1 Tbs chili paste (like Sambal Oelek - found in the Asian foods aisle) or sriracha - or to taste
