Pumpkin soup
Ingredients
  • 500g pumpkin
  • 30g butter
  • 1 medium oinion chopped
  • 1 clove garlic crushed
  • 3 cups hot water
  • 2 chicken stock cubes
  • 1 tble tomato paste
  • ΒΌ cup cream (optional)
  • 1 tble grated Parmesan cheese ( optional)
Steps
  1. Combine pumpkin, butter, onion, & garlic in a large bowl. Cover & cook on high for 7 mins.
  2. Add water, stock cubes & tomato paste.
  3. Cover, cook on high for about 15 minutes or until pumpkin is tender.
  4. Blend or processor in several batches until smooth.
  5. Reheat, stir in cream.
  6. Sprinkle with cheese.
