Beet & Chickpea Pasta with Lemon Tahini Sauce

- 4 medium sized beets, washed and sliced into ½ inch pieces
- 2 Tablespoons olive oil
- pinch of salt and pepper
- 8 ounces penne pasta
- 1 (15 ounce) can chickpeas, rinsed and drained
- ¼ cup lightly toasted almonds, roughly chopped
- ½ cup parsley, minced
- salt and pepper to taste
- pinch of crushed red pepper flakes for serving

- ¼ cup tahini
- 1 large clove of garlic, minced
- ½ cup water + additional to thin if necessary
- 2 Tablespoons fresh lemon juice
- 1 Tablespoon olive oil
- 1 teaspoon honey

- 1 Tablespoon minced parsley
