Mom's Stuffing
Ingredients
  • 1 loaf French bread
  • 4 to 5 stalks celery
  • 1 ½ bunches green onions
  • ¼ bunch flat leafed parsley
  • 1 cup chopped sorrel leaves (optional)
  • ½ cup fresh basil instead)
  • ½ cup fat of some sort
  • 1 egg
  • 2 Tbsp fresh marjoram and/or oregano
  • 1 Tbsp fresh thyme
  • 2 Tbsp fresh sage
  • 1 Tbsp fresh savory
  • 4 fresh bay leaves (remove veins and mince really fine, or leave whole and remove before serving)
  • 2 tsp salt
  • Ground pepper
  • 2 to 3 cups stock
Steps
  1. Partially dry French bread pieces in a low over
  2. Crumble pieces into a bowl and set aside
  3. Saute celery and onion in fat
  4. Add parsley. Add to bread and toss
  5. Add egg, herbs and seasonings. Moisten with stock.
  6. Cook
