Dan's Bolognese (sized for green cast iron pot)
Ingredients
  • 2 x 700ml jars passata
  • 2 x 400g cans diced tomatoes
  • 300g(ish) tomato paste
  • 250g red lentils
  • 2 heaped dessert spoons beef stock
  • 300g onions
  • ½ bulb of garlic, diced finely
  • Oil for saute
  • ½kg minced beef
  • ½kg minced pork
  • 1 tablespoon dried chilli flakes (this is for a mild sauce)
  • 1 teaspoons freshly ground pepper
  • 2 tablespoons dried mixed herbs
  • 1kg frozen corn
  • ½kg chopped carrots
  • 1.5 tablespoons cider vinegar
  • ¼ cup caster sugar
  • Cornflour as needed to thicken (may not be needed
  • Salt if needed to taste - or add more stock
  • Pomegranate molasses to finish
Steps
  1. Place tomato products, beef stock, water and lentils in a separate pan and cook until soft.
  2. Brown the meat, drain fat if needed. Saute onions, carrots and garlic, add everything together and cook down using water as needed
