This curry chicken salad is a fun take on the classic mixed with juicy chicken, raisins, cashews, and celery tossed in a creamy dressing with cilantro.

  • 1 tablespoon olive oil

  • ¼ cup yogurt
  • ½ tablespoon honey
  • 3 teaspoons curry powder
  • ½ teaspoon ground turmeric, optional for a brighter yellow/orange color
  • subheading: For the salad:
  • 2 ribs celery, chopped
  • ¼ red onion, diced
  • ⅓ cup raisins
  • 1 small apple, cored and diced
  • ⅓ cup dry roasted cashews
  • ¼ cup fresh chopped cilantro
  • salt and pepper, to taste
