Years ago I used to really enjoy a form of Russian BBQ called Shashlik, a marinated lamb kebab, I looked around on the internet trying to find the recipe and most mentioned lemon juice or pomegranate juice and I even tried the lemon juice recipe and whilst nice it was not what I remembered.

So I asked the Russian guy in the office next to mine if he had a favourite recipe and it was completely different to the ones I had found on the net, so I will give this a try, he actually came back into my office latter to re-iterate that you really do need a lot or marjoram, so I'm going to take his word for that part of the recipe.
Ingredients
  • 1 ½ pounds / 650 grams Lamb, cut into 2 inch cubes
  • red wine vinegar
  • some red wine (optional)
  • a lot of marjoram (two lamb shanks =¾ of a packet of marjoram) you can’t use too much
  • 1 Shallot grated (optional)
  • 1 Large Onion, grated
  • ½ a cup Olive Oil (or less if you prefer)
  • 4 cloves Garlic, minced
  • 1tsp Black Pepper, ground
  • 1 tsp Paprika
  • 1 tsp Salt
