  • 530g whole emmer flour (4 cups 1 Tbsp)
  • 8g salt (1 ½ tsp)
  • 360g water (1 ½ cups)
  • 75g honey (3 Tbsp) When I made this with only 2 Tbsp of honey, I added an additional Tbsp of water.
  • 80g active starter (⅓ cup)
