Cheezy Spinach Scramble & Bacon

Ingredients
  • 2 strips bacon
  • 2 eggs
  • 2 cups baby spinach, packed
  • 2 tbsp dairy-free cheese
  • 1 green onion, sliced thinly
  • Sea salt and black pepper, to taste
  • Hot sauce, to taste, optional
Steps
  1. In a pan, cook bacon strips over medium-high heat to desired level of doneness. Transfer bacon to a
  2. plate and set aside. Leave the leftover bacon fat in the pan and turn the heat to medium-low
  3. Crack eggs into a small bowl, season with salt and pepper, and whisk until fluffy. Pour the
  4. eggs into the pan and stir them around with a spatula until they are about halfway set. Add the
  5. spinach to the pan and continue stirring until the eggs are cooked to your preference
  6. Transfer the eggs to the plate with the bacon, top them with the dairy-free cheese, and
  7. green onions. If desired, sprinkle with hot sauce
