Bacon and Brie Frittata (replace bacon with mushrooms and butter/ EVOO)
A faster frittata made by making it for 5 or so minutes on top of the stove before finishing it in the oven!
Ingredients
  • 3 to 4 strips bacon, diced
  • 2 TBS grass fed butter (I always use Kerry Gold brand)
  • 6 eggs
  • 2 scallions, sliced thin
  • Thinly sliced Brie or other soft, melty cheese
  • Salt and Pepper
