vegan frijoles negros, IP
Ingredients
  • 1 lb dry black beans, unsoaked
  • 1 onion, diced
  • Garlic, minced (whatever number of cloves you like)
  • 1 jalapeno, seeded and diced (or other pepper of choice)
  • 1 6-oz can of tomato paste
  • 1 tbsp cumin
  • ½ tsp dried oregano
  • 2 tsp paprika
  • 2 tsp salt
  • 8 cups vegetable broth (chicken broth would work, too)
  • juice from 1 lime
  • couple of dashes of liquid smoke (optional, but definitely adds depth to the flavor)
Steps
  1. Pick over and rinse beans.
  2. Add all ingredients except lime juice to pressure cooker and mix to distribute ingredients evenly.
  3. Cook on "bean" setting for 30 minutes. Allow the cooker to release pressure naturally.
  4. Add lime juice and mix.
  5. serve over rice with shredded cheese and hot sauce.
