Instant Pot: Chicken & Dumplings

Chicken and Dumplings is a classic Southern comfort food. It starts with a creamy chicken soup. Celery and carrots are optional vegetable additions to the soup base. Strips of biscuit dumplings are cooked directly in the soup base. You can find a wide variety of methods and preparations out there for chicken and dumplings, particularly when it comes to the dough for the dumpling itself.

Ingredients
  • 2 tablespoons butter, salted
  • 2 cups yellow onions, chopped
  • 1 teaspoon poultry seasoning
  • ½ teaspoon salt
  • 1 cup celery, chopped
  • 1 cup carrots, chopped and peeled
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cut in 1-inch pieces
  • 1 can (10.2 oz) Pillsbury Grands! Southern Homestyle refrigerated Buttermilk biscuits (5 biscuits)
  • ½ cup heavy whipping cream
Steps
  1. Using a 6-quart Instant Pot, select SAUTÉ ; adjust to normal.  When the indicator reads Hot, melt the butter in the insert.
  2. ♨️ Add onions, poultry seasoning and salt; sauté 6 to 8 minutes, stirring occasionally, until softened and slightly translucent. When that’s done, select CANCEL.  Stir in celery and carrots. Stir in broth and chicken.
  3. Secure lid; set pressure valve to SEALING.
  4. ♨️ Select MANUAL; cook on high pressure for 2 minutes.
  5. When done, select CANCEL. Set pressure valve to VENTING (perform a QR).
  6. Separate dough into 5 biscuits. Cut each biscuit into 8 pieces.
  7. Set Instant Pot to SAUTÉ, normal temperature. Stir in whipping cream; heat to simmering.
  8. ♨️ Stir in biscuit pieces; cook 4 to 6 minutes, stirring frequently, until dumplings are cooked through and liquid thickens.
  9. ⭐️ Take care to drop the biscuit pieces into the simmering liquid individually so that they don’t clump together.
