Warm Crab and Spinach Dip
Ingredients

  • 1 tablespoon extra-virgin olive oil, plus more for the baking dish
  • One (10 -ounce) package frozen chopped spinach, defrosted
  • 2 tablespoons all-purpose flour
  • ¾ cup low-fat milk
  • 1 stalk celery, finely diced
  • ¼ cup finely diced shallot (about 2 medium shallots)
  • 1 clove garlic, minced or finely grated
  • 1 teaspoon sweet paprika
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ cup (1 ½ ounces) grated parmesan cheese
  • 12 ounces lump crab meat, drained and picked over to remove any cartilage
