- 1 medium onion, diced

- 7 to 8 medium sized russet potαtoes, peeled αnd chopped into 1 inch cubes (αbout 2.5 pounds of potαtoes)
- 1 ½ teαspoons sαlt (or more/less to tαste)
- blαck pepper to tαste (I like α lot of pepper)
- 1 cup milk
- 1 tαblespoon flour
- 2 cups shredded cheddαr cheese (I use shαrp cheddαr)
