Ingredients
  • 1 lb very ripe tomatoes, preferably heirloom
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 jalapeno pepper, minced
  • 1 teaspoon oregano, minced
  • ½ teaspoon of Tabasco sauce (plus more to taste if desired)
  • 2 quail eggs (optional)
  • 3 ounces watermelon, brunoise (finely diced cubes)
  • Sprouts of your choice (I like clover)
  • 2 pistachios, chopped
  • Olive oil, for drizzling
  • Kosher salt for seasoning
  • Sea salt for finishing (optional)
  • 4 small slices of bread for serving, toasted (optional, as evidenced here)
