Apricot Oatmeal Bars

Ingredients
  • 1½ cups oats
  • 1¼ cup flour
  • ½ cup brown sugar
  • 1 tsp ground ginger
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¾ cup butter, melted
  • 1½ cup apricot preserves (or sub other fruit preserves)
Steps
  1. Preheat oven to 350°F. Line 8 inch square pan with foil.
  2. Combine dry ingredients in bowl. Add butter, stir until crumbly. Reserve 1½ cups of oat mixture. Press remaining oat mixture into pan in even layer.
  3. Combine preserves and ½ tsp ground ginger. Spread preserves evenly over crust. Sprinkle remaining oat mixture.
  4. Bake 30 minutes or until golden brown. Cool completely on wire rack. Cut into bars.
