Spinach Ohitashi (Japanese Spinach Salad) ほうれん草のお浸し
Ingredients
  • 1 bunch spinach (8 oz, 227 g)
  • Pinch kosher salt (Diamond Crystal; use half for table salt)
  • subheading: Kombu Dashi (You can also use Awase Dashi (a combination of kombu + katsuobushi):
  • ½ cup water
  • 1 kombu (dried kelp) (5 g; 2"x 2" or 5 cm x 5 cm)
  • subheading: Seasonings:
  • 1 Tbsp mirin
  • 1 Tbsp usukuchi (light-colored) soy sauce
