Date-Sweetened Zucchini Brownies with Chocolate-Peanut Butter Frosting
Ingredients
  • ½ cup pitted and chopped medjool dates
  • ¾ cup hot water
  • ⅓ cup applesauce
  • 1 teaspoon vanilla extract
  • 1 cup white whole wheat or whole wheat pastry flour
  • ⅓ cup cocoa powder
  • ¼ cup vegan sugar, xylitol, stevia baking blend, or sweetener of choice (see note)
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup finely shredded zucchini (about ½ medium zucchini shredded in food processor)
  • ¼ cup walnut pieces optional
  • subheading: OPTIONAL FROSTING:
  • ½ cup vegan chocolate chips
  • 3 tablespoons almond milk or other non-dairy milk
  • 1 tablespoon natural peanut butter or other nut butter
