Ingredients
  • 1 stick - ½ cup unsalted butter
  • 1 large yellow onion, (to yield 1-½ cups finely chopped)
  • 1 bunch green onions, chopped
  • 2 ribs celery, (to yield 1 cup finely chopped)
  • 4 cloves garlic, peeled
  • 2 qty 12-oz. packages frozen artichoke hearts, quartered - defrosted
  • ¼ cup all purpose flour
  • 1 carton good quality or home made chicken stock (4 cups)
  • ½ tsp Cayenne pepper
  • 1 tsp salt
  • 1 tbs Worcestershire sauce
  • ½ tsp fresh thyme or dried thyme in a pinch
  • 2 pints oysters, drained with reserve liquor
  • ⅓ cup sherry
  • 1 cup heavy cream
  • 1 cup milk
