Smothered Doves

Ingredients
  • 6 to 8 Doves
  • 3 Tblsp. flour
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ c olive oil
  • 1 or 2 cloves garlic
  • 1 c red wine
Steps
  1. Dust doves with flour, season with salt & pepper.
  2. In a heavy skillet, lightly brown doves in heated oil with garlic.
  3. When browned, remove garlic and throw away.
  4. Add wine & enough water to barely cover birds.
  5. Simmer about 1½ hours until tender.
  6. Thicken juices in pan with remaining flour.
  7. Serve over rice
