Best Ever Wild Rice Stuffing
Ingredients
  • 1-½ cups wild rice blend (I like Lundberg Wild Blend)
  • 2-¼ cups gluten-free chicken broth
  • 1 dried bay leaf
  • salt and pepper
  • 4 slices bacon, chopped
  • 2 Tablespoons butter
  • 1 jumbo shallot or 1 small onion, chopped
  • 8oz mushrooms, sliced
  • 2 stalks celery, finely chopped
  • ½ teaspoon dried thyme
  • 3 cloves garlic, minced
  • 1 Tablespoon chopped fresh sage
  •  
  • ¼ cup Fisher whole almonds, chopped
  • ¼ cup dried cranberries
  • ¼ cup freshly grated parmesan cheese, optional
