Ingredients

  • 8 pounds mixed vegetables (such as carrots, celery, onions, green beans, peas, corn)
  • 4 cans diced tomatoes (28 ounces each)
  • 2 cans tomato sauce (15 ounces each)
  • 10 cups vegetable or chicken broth
  • 4 cloves garlic, minced
  • 4 tablespoons olive oil
  • 4 bay leaves
  • 4 teaspoons dried thyme
  • 4 teaspoons dried basil
  • Salt and pepper to taste
