One-Bowl Healthy Oatmeal Carrot Muffins
Ingredients
  • 1 cup peeled and grated carrots
  • 1 cup unsweetened applesauce,
  • 2 large eggs, can sub 2 flax eggs
  • ¼ cup olive oil, or vegetable oil
  • 2 teaspoons vanilla
  • ⅓ cup light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • 1¼ cups whole wheat flour
  • ¾ cup rolled oats
  • ⅓ cup chopped walnuts, plus extra for topping, optional
