Thai Crunch Salad

Ingredients
  • 4T Asian sesame salad dressing
  • 1T Peanut butter; creamy or crunchy
  • Lettuce
  • Cabbage (regular or napa)
  • Shredded carrots
  • Cilantro, fresh
  • ¼ c. Edamame, shelled
  • Chopped red pepper
  • Chopped green onion
  • Mandarin oranges
  • 2 boneless chicken breasts either poached and shredded or grilled and chopped
  • Chopped peanuts
  • Fried wonton strips (see below) or chow mien noodles (for topping salad)
Steps
  1. Mix salad dressing with peanut butter; set aside.
  2. Toss lettuce, cabbage, carrots and cilantro with half of the dressing.
  3. Top with edamame, red pepper, onion, oranges, chicken, peanuts and crunchy things.
  4. Serve with leftover dressing and extra cilantro on the side.
Notes
  • To fry wontons, cut around 10 to 15 wonton wrappers (or more; they're very tasty!) into ½ inch strips. Heat a little oil (just cover bottom of small nonstick frypan). Drop strips into oil and cook till browned in batches.
  • Cook really fast!! Sprinkle with a little salt while still hot.
