Ingredients

- ¼ tablespoon kosher salt

- 1 yellow onion, peeled and sliced in 1-inch rounds
- 4 cloves garlic, peeled and smashed
- ½ cup low-sodium beef stock
- ¼ cup white vinegar
- ¼ cup warm water
- Enchilada sauce, recipe follows
- 16 (6-inch) corn tortillas
- 1 cup grated Cheddar
- 1 cup grated pepper jack cheese
- ¼ cup sliced green onions
- 1 85g can sliced black olives
- ½ cup sour cream, for garnish

- 2 cups boiling water
- 3 ounces dried California chile pods
- 85g dried guajillo chile pods
- 28g dried pasilla chile pods
- 1 tablespoon canola oil
- ½ yellow onion, peeled and chopped
- 2 garlic cloves, chopped
- 400g can petite diced tomatoes, preferably fire roasted
- ½ teaspoon dried Mexican oregano
- ½ teaspoon ground cumin
- ½ teaspoon kosher salt
- ½teaspoon freshly ground black pepper
- ¼ teaspoon ground cloves
