Copycat CPK Spicy Chipotle No-chicken Pizza with corn and bean salsa and a cilantro/jalapeno/lime drizzle

Ingredients
  • subheading: Pizza Dough:
  • ½ tsp maple syrup
  • 1½ tsp active yeast
  • ¾ cup warm water
  • 1½ tsp olive oil
  • 1½ tsp maple syrup
  • tsp salt
  • 1½ cup + 2 tbsp whole wheat flour
  •  
  • subheading: Base Sauce:
  • ¼ cup tomato sauce
  • 2 tbsp red wine vinegar
  • 2 tbsp distilled white vinegar
  • 1 tbsp lime juice
  • 1 tsp maple syrup
  • 2 tsp tahini
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp sweet paprika
  • 1½ tsp smoked paprika
  • 1½ tsp chili powder
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 chipotle pepper in adobo sauce
  •  
  • subheading: Bean & Corn Salsa:
  • ½ cup black beans
  • ½ cup corn
  • ½ cup peppers, chopped
  • ¼ cup tomatoes, chopped
  • ¼ cup onions, chopped
  • ¼ cup jalapenos, chopped
  • ½ cup cilantro
  • 3 to 4 teaspoons lime juice
  • ½ tbsp olive oil
  • ¼ tsp ground cumin
  • salt to taste
  •  
  • subheading: Cilantro/lime/jalapeno Drizzle:
  • ¾ of a bunch of cilantro, stems included
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 teaspoon honey or pure maple syrup
  • 2 clove garlic
  • 1 jalapeno (I leave the seeds in for extra heat)
  • ¼ teaspoon salt
  • black pepper
  •  
  • subheading: Extra stuff:
  • Extra cilantro
  • onion strips
  • fresh tomato chucks
Steps
  1. subheading: Pizza Dough:
  2. In a mixing bowl, combine the ½ tsp of maple syrup, yeast, and the warm water. Let sit for 15 minutes in a warm place.
  3. Add the oil, the rest of the maple syrup, salt, and the flour and stir together until it forms a dough.
  4. Using a dough hook, mix for 5 to 8 minutes until elastic and smooth.
  5. Cover with some oil and let sit in a bowl for 2 hours.
  6. Shape into a pizza and cook at 500 on a preheated pizza stone for about 10 minutes.

  8. Blend everything together. Set aside.

  10. Mix everything together. Set aside.
  11. subheading: Drizzle:
  12. Blend. Set aside.
  13. When the dough has risen. Place pizza stone in cold oven and heat to 500°. Sprinkle some flour or corn meal flour on a plate. Make sure the dough doesn't stick because you want it to slide onto the pizza stone.
  14. Spread on the base sauce. Top with onions and chopped tomato. Slide onto the pizza stone and cook for 10 minutes.
  15. Let sit for a couple of minutes after being removed from the oven and then cut into 4 pieces. Top with corn salsa and cilantro drizzle. Use some of the leftover base sauce to drizzle on top as well. Sprinkle with extra cilantro.
