Copycat CPK Spicy Chipotle No-chicken Pizza with corn and bean salsa and a cilantro/jalapeno/lime drizzle

Ingredients
- subheading: Pizza Dough:
- ½ tsp maple syrup
- 1½ tsp active yeast
- ¾ cup warm water
- 1½ tsp olive oil
- 1½ tsp maple syrup
- tsp salt
- 1½ cup + 2 tbsp whole wheat flour
- subheading: Base Sauce:
- ¼ cup tomato sauce
- 2 tbsp red wine vinegar
- 2 tbsp distilled white vinegar
- 1 tbsp lime juice
- 1 tsp maple syrup
- 2 tsp tahini
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp sweet paprika
- 1½ tsp smoked paprika
- 1½ tsp chili powder
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 chipotle pepper in adobo sauce
- subheading: Bean & Corn Salsa:
- ½ cup black beans
- ½ cup corn
- ½ cup peppers, chopped
- ¼ cup tomatoes, chopped
- ¼ cup onions, chopped
- ¼ cup jalapenos, chopped
- ½ cup cilantro
- 3 to 4 teaspoons lime juice
- ½ tbsp olive oil
- ¼ tsp ground cumin
- salt to taste
- subheading: Cilantro/lime/jalapeno Drizzle:
- ¾ of a bunch of cilantro, stems included
- ¼ cup extra virgin olive oil
- 2 tbsp fresh lime juice
- 1 teaspoon honey or pure maple syrup
- 2 clove garlic
- 1 jalapeno (I leave the seeds in for extra heat)
- ¼ teaspoon salt
- black pepper

- Extra cilantro
- onion strips
- fresh tomato chucks
Steps
- subheading: Pizza Dough:
- In a mixing bowl, combine the ½ tsp of maple syrup, yeast, and the warm water. Let sit for 15 minutes in a warm place.
- Add the oil, the rest of the maple syrup, salt, and the flour and stir together until it forms a dough.
- Using a dough hook, mix for 5 to 8 minutes until elastic and smooth.
- Cover with some oil and let sit in a bowl for 2 hours.
- Shape into a pizza and cook at 500 on a preheated pizza stone for about 10 minutes.

- Blend everything together. Set aside.

- Mix everything together. Set aside.
- subheading: Drizzle:
- Blend. Set aside.
- When the dough has risen. Place pizza stone in cold oven and heat to 500°. Sprinkle some flour or corn meal flour on a plate. Make sure the dough doesn't stick because you want it to slide onto the pizza stone.
- Spread on the base sauce. Top with onions and chopped tomato. Slide onto the pizza stone and cook for 10 minutes.
- Let sit for a couple of minutes after being removed from the oven and then cut into 4 pieces. Top with corn salsa and cilantro drizzle. Use some of the leftover base sauce to drizzle on top as well. Sprinkle with extra cilantro.
