Butterless Fluffy Buttermilk Pancakes for Two
Ingredients
  • ½ cup  flour (AP, spelt, bread, and gluten-free mixes all work!)
  • 1 tbsp  coconut sugar*
  • 1 ¼ tbsp baking powder
  • ¼ tsp salt
  • 1 egg, lightly beaten
  • ½ cup almond milk**
  • 1 tbsp walnut oil (can sub fruit puree or applesauce but the texture will change!)
  • ½ tsp apple cider vinegar (optional)
  • 1 tsp vanilla/almond extract (optional)
  • mix in ideas: spices, berries, nut butter, chocolate chips, chia seeds… (optional)
  •  
  • Can sub maple syrup, agave, or zero calorie sweeteners, Swerve, Sola, etc.
  •  
  • note: eplace water with the same amount of liquid- any milk or fruit juices will work!
