  • 2 lb boneless skinless chicken breasts cut into 1-inch cubes
  • 2 can (15 oz per can) chickpeas drained
  • 2 can (14.5 oz per can) fire roasted diced tomatoes undrained
  • 1 can (14 oz per can) unsweetened coconut milk
  • 2 yellow onion large-sized, diced
  • 4 carrots
  • 1 lemon for juice and zest
  • ¼ cup chicken stock
  • 2 tbsp tomato paste
  • 2 tbsp extra virgin olive oil
  • 1 tbsp garlic powder
  • 1 tbsp ground ginger
  • 2 tbsp honey
  • 1 tsp salt
  • 2 tsp turmeric
  • 2 tsp coriander
  • 1 tsp cumin
  • ½ tsp cinnamon
  • ½ tsp pepper
  • ½ tsp nutmeg
  • ¼ tsp cayenne pepper
  • 1 tbsp cornstarch (added on day of cooking)
